Ingredients

  • 2- pound chuck
  • 2 tablespoons olive oil, divided
  • 1 onion
  • 1 garlic clove
  • 2 tablespoons tomato paste
  • ¾ cup dark beer you can substitute with red wine or red grape juice
  • 1¼ cups beef broth
  • ½ tablespoon Worcestershire sauce
  • 3 carrots, peeled and cut into large 2" to 3" chunks
  • 1 lb potatoes
  •  
  • For the Pot Roast Dry Rub
  • 1½ teaspoons dried crushed rosemary
  • 1½ teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoons sea salt
  • Pinch fresh ground black pepper
