I started by sautéing red bell pepper and onions and then I added garlic. The original name of this post was Caribbean RiceandBeans, but since I’ve never actually been to the Caribbean, I thought the name was a less than wise choice
My version is for a simple take on RedBeansandRice, using my Hamilton Beach Rice Cooker. Place all of the ingredients in the rice cooker and press WHITE RICE
Use a rather tall pot so beans won’t splash out while boiling. using a heavy pot, boil. Of course, redbeans were never served to LeRuth’s customers but it was often served to the staff
Soaked BeansReheat the pot over medium heat and add the oil. Common Cajun ingredients include rice, beans, peppers, celery, onion, okra, seafood, and sausage—particularly that Bayou staple, andouille
Add the beans to a large potand then add enough cool water to cover the beans by about a few inches (they’ll absorb water as they soak, so make sure to enough water to keep them covered as they expand)
Stir in beans, mashing slightly. Add hot broth and jerk seasoning to bacon mixture. Stir in rice. Make this quick soup ahead, and divide it into small, shallow containers with lids to ensure quick cooling in the refrigerator and easy portability
No I am not an expert on RiceandBeans in South, but an expert on spicing it up. Add cooked rice in a bowl with the beans toss with all seasonings add olive oil, blend together
