My family had a quiet dinner at home, made a roast chicken, a side potato dish and a simple salad, finished off with ice cream and some fruits for dessert
A while ago, I ran across Chef Michael Symon’s mother’s recipe for meatballs made withricotta cheese instead and I’ve been making my meatballs that way ever since
Roma tomatoes, onions and a whole bulb of garlic are roasted in the oven, then blended with fresh basil for a sweet easy sauce that tastes like it simmered for hours
It slices beautifully, with minimal crumb, and it is very soft. I am so thrilled with this recipe. Look at all those pretty little herbsand onions speckled all over the loaf
Serve the cannelloni with extra tomato sauce from the baking dish and garnish with fresh basil. Hollow out the center making a well in the middle of the flour with steep sides
Serve the meatballs topped with warm mole sauce and pickled red onions. With your fingers, mix together the pork, ricotta, salt, parsley, garlic, smoked paprika, sambal oelek and egg in a bowl
Drizzle with the olive oil and sprinkle with sea salt. Serve with bread. Photograph by Andrew Purcell. Whisk the ricotta, lemon zest, thyme, rosemary, 1/4 teaspoon kosher salt and the red pepper flakes in a medium bowl until smooth and creamy. Transfer to a 2-cup ramekin and sprinkle with the parmesan. Bake until golden and bubbling, about 15 minutes
The ItalianMeatballs are juicy, and just as delicious on it's own, thanks to the sauteed Onion and Garlic, as well as the Parmesan Cheese that goes into the Meatballs
You can substitute dried herbsand spices for a quicker recipe. If you lightly coat your handswith olive oil before rolling the meatballs, they will form better and crack less
Now take a spoon and cover the cookie with the glaze,then add some non-pareils. They are great with a nice mug of tea or tall glass of milk either way you can’t go wrong
You know I can’t fry those meatballs, I have to skinny them up and bake them in the oven. I’d make skinny turkey meatballs to add to my skimpy vegetable soup
For dinner last night, we made homemade ricotta, then mixed it with fresh herbs to make a creamy spread for thick slices of grilled bread, ribbony asparagus salad with lemon and parmesan (which I can't take credit for--this pretty salad was inspired by Smitten Kitchen), and spicy skewered shrimp
(with my notes and modification in blue) . With a group of gorgeous ladies, we are baking all recipes from the book, "Coffee Cakes" by Lou Seibert Pappas until every recipe from this book has been baked
Then there are lots of herbs here that I used to combine with the ricotta cheese. Summer Salad with Herbed Ricottaand Balsamic Vinaigrette – a simple salad with gorgeous heirloom tomatoes, cucumbers and radishes and drizzled with a simple balsamic vinaigrette and a dollop of herbed ricotta takes this salad over the top
This bread can be stuffed with any number of cheeses, veggies , cold cuts and other fillings. Place each log of dough seam-side down on a parchment-lined baking sheet that has been sprinkled with cornmeal
