drain and rinse with cold water. sprinkle with remaining mozzarella and Parmesan cheese. Using a pastry brush, coat sides and bottom of a 3-quart baking dish with oil. In a large bowl, combine eggs, ricotta cheese, 2-½ cups of mozzarella, ½ cup Parmesan cheese, Romano cheese, basil, pepper and prepared sausage. Cover and bake at 350°F for 30 minutes
Top with half of the fresh baby spinach, next add half of the meat and onion mixture, followed by a bit of mozzarella and parmesan, and lastly spoon a little marinara on top and spread carefully

If you happen to have some fresh Italian herbs on hand like basil, thyme, marjoram, oregano or rosemary you can use some of those in place of some of the italian blend to add more fresh flavor
For this post, there was no doubt in my mind that I would make one with Italian sausage as I know through experience that it goes so well with a creamy pasta sauce and for that I’m glad to have Prego Homestyle Alfredo Sauce to the rescue

Pour over spinach mixture and stir lightly with fork to distribute evenly. Add spinach, toss until just wilted, about 3 minutes. Add sausage, saute until cooked through, breaking up, about 7 minutes. mix in 1 cup cheese and peppers. Bake torta until puffed up and golden and center is set, about 55 minutes. Remove from oven and let rest 15 minutes before serving. 1 lb sweet Italian sausage, casings removed
