Ingredients

  • 1 onion, chopped (1 cup)
  • 11 large red bell pepper, chopped (1 cup)
  • 16 cloves garlic, minced
  • 11 teaspoon dried oregano
  • 1½ teaspoon dried thyme
  • 13 medium zucchini, halved lengthwise and cut into ¼-inch slices (4 cups)
  • 11 15- oz. can chickpeas, rinsed and drained (1½ cups)
  • 11 cup oil-free marinara sauce
  • 11 tablespoon white wine vinegar
  • 1 Sea salt and freshly ground black pepper, to taste
  • 18 to 10 fresh basil leaves, chopped
