Ingredients

  • 4 cups thinly sliced zucchini
  • 1 cup chopped onion
  • 1/2 cup unsalted butter or 1/2 cup margarine or 1/4 cup olive oil
  • 1/2 cup chopped fresh parsley or 2 tablespoons dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chopped fresh basil
  • 1/4 teaspoon chopped fresh oregano
  • 2 eggs, beaten
  • 2 cups shredded mozzarella cheese or 2 cups muenster cheese
  • 1 tablespoon dijon-style mustard
  • 1 homemade deep dish pie shell
