Corn bread has always been one of my favorite sides. I found the Corn Bread Mix to be incredibly easy to work with – you just need to add milk, butter and an egg, plus your favorite mix-ins. I decided to make these jalapeño corn bread muffins out of mine! For me, individual muffins takes some stress out of any dinner because your guests can just grab a muffin and you don’t have to worry about cutting pieces out of a pan.
