Ingredients

  • 1 box (12 ounces) fettuccine
  • 1 tablespoon olive oil
  • 1/3 cup pesto
  • 1 cup grated Parmesan cheese, plus a little extra for garnish
  • juice and zest of 1 small lemon
  • 1 tablespoon chopped fresh parsley
  • salt and pepper
  • pinch of cayenne pepper
  • 1 1/2 cups red and yellow cherry tomatoes, halved
  • 3 chicken breasts, butterflied and grilled
  • 1 cup whole wheat flour
  • 1 cup ground yellow cornmeal
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup nonfat Greek yogurt or sour cream
  • 1/4 cup vegetable oil
  • 1/2 cup skim milk
  • 1 egg 1 1/4 cups grated cheddar cheese, divided
  • 2 jalapenos, 1 seeded and diced, and 1 sliced into rings
