Ingredients

  • 2 large eggs
  • 3/4 cup whole milk
  • 2 teaspoons lime juice
  • zest of one lime
  • 2 1/2 cups fresh cut corn kernels (about 3 ears of corn)
  • 1/2 cup diced red bell pepper
  • 1/2 cup scallions (about 2-3)
  • 1/4 cup cilantro, packed
  • 3/4 cup cheddar cheese, shredded
  • 2 tablespoons finely minced jalapeno (about 1 medium jalapeno)
  • Avocado Cream
  • 1 avocado 3/4 cup sour cream
  • 1 tablespoon cilantro, packed
  • 1/2 teaspoon fresh lime juice
  • 1/2 teaspoon salt
  • 1 small garlic clove
  • 1 tablespoon finely minced jalapeno
