  • 6 garlic cloves, minced
  • 3 jalapeno peppers, finely chopped (leave seeds in or take them out for less heat)
  • 1/3 cup olive oil
  • 1/3 cup fresh lime juice
  • 3 tablespoons Dijon mustard
  • 1 teaspoon kosher salt (or use regular salt)
  • 1 1/4-1 1/2 lbs beef flank steak
  • 12 slices Texas toast thick bread, toasted (or other thick-cut white bread)
  • 1/2 cup mayonnaise
  • 1/2 teaspoon chipotle chile in adobo, minced (or 1 tsp. chile powder)
  • 1 red onion, quartered and thinly sliced
  • 4 ounces queso fresco, crumbled (or farmer cheese)
  • fresh cilantro stem (or parsley)
  • lime wedge
