Ingredients

  • 250 g (9 ounces) unsalted butter
  • 140 g (1 cup) Icing sugar, sifted
  • 1 egg yolk, lightly beaten
  • 90 g (3 1/4 ounces) cream cheese, cut into chunks
  • 1 1/2 tsp vanilla extract
  • 1 tsp finely grated fresh lemon zest
  • 350 g of plain flour, sifted (2 3/4 cup flour)
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 2 TBS each of three of your favourite flavours of jam
