Ingredients

  • 3 medium potatoes, peeled and chopped
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon red chile pepper (cayenne pepper)
  • 1/4 cup oil
  • 1/2 teaspoon cumin seeds
  • 1 onion, thinly sliced
  • 2 bay leaves
  • 1 black cardamom
  • 2 green cardamom
  • 1/4 " blace of mace
  • 2 teaspoons ginger, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 1 pound boneless leg of lamb cut into stewing pieces
  • 1 cinnamon stick
  • 2 cloves 1 small tomato, chopped
  • salt, to taste
  • 1/2 cup melon seeds
  • 1/2 cup poppy seeds
  • 1/4 cup dried rose
  • 3/4 cup almonds
  • 1/4 cup fennel seed
  • 1/4 teaspoon cardamom seeds
  • 1/4 teaspoon white pepper
  • 5 cups sugar
  • 2 1/2 cups water
  • 2 cups milk
  • 1/4 cup thandai syrup
  • a pinch of white pepper, for garnish
