Ingredients

  • Kale and Avocado Salad with Roasted Chickpeas and Broccoli
  • Serves 2 as a meal or 4 as a side
  • Chickpeas and Broccoli
  • 1 rounded cup cooked chickpeas
  • 1 small head broccoli
  • 1 tsp smoked paprika
  • ½ tsp. ground cumin
  • ½ tsp. ground coriander
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • Grapeseed or coconut oil
  • Mustard-Citrus Dressing
  • 1 tbsp mustard
  • ½-1 tbsp avocado oil
  • ½ tbsp. nutritional yeast
  • ½ tsp. apple cider vinegar
  • ½-1 tsp raw honey (or pure maple syrup if vegan)
  • Zest and juice ½ small orange
  • Juice ½ small lime
  • Salad
  • 1 bunch Tuscan kale
  • 1 large avocado
  • 2 tbsp pumpkin seeds
  • 2 tbsp hemp seeds
