Kim's Maple Cinnamon Almond Chex Mix

  • 1 box cinnamon chex cereal - 13.5 oz
  • 13/4 box rice chex cereal - 12.8 oz
  • 110 - 12 oz almonds, sliced
  • 11 1/2 c white sugar
  • 11 1/2 c light corn syrup
  • 118 Tbsp butter = 2 sticks + 2 tablespoons (no substitute)
  • 11 pinch salt
  • 11/2 tsp maple extract
  • 1 Non-Edible or OtherMix the Cinnamon Chex, Rice Chex and almonds together in a large plastic bowl. In a heavy saucepan over medium heat, bring the sugar, corn syrup, salt and butter to a boil. Stir occasionally until it turns golden and coats the back of a spoon, approximately 4 1/2 - 5 minutes. Remove from heat and add the extract, stirring well. Immediately pour over the cereal mixture and stir to coat. Spread onto parchment paper and let cool. Store tightly covered. NOTE: This makes a HUGE batch of Chex mix! It can be halved with no problems. Also, maple extract is pretty potent! If you'd like a stronger maple flavor, you can increase to 3/4 teaspoon.
