Ingredients

  • 300 grams minced lamb
  • 300 grams minced beef
  • 1 small red onion, very finely chopped
  • 2 large cloves of garlic, crushed
  • 50 grams toasted pine nuts, divided, half roughly chopped
  • 3 tablespoons flat-leaf parsley, finely chopped, plus extra for garnish
  • 1 large hot red chile pepper, deseeded and finely chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1/2 teaspoon grated nutmeg
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon coarse salt (kosher or sea salt)
  • 1 tablespoon canola oil
  • Sauce
  • 4 tablespoons tahini paste, well stirred
  • 2-3 tablespoons lemon juice
  • 1 large clove of garlic, crushed
  • 2 tablespoons olive oil
  • 2-3 tablespoons water
