Ingredients

  • Ingredients :For Kofta :2 medium potatoes - boiled & mashed
  • 1 plantain (raw banana / vazhakkai) - boiled & mashed
  • 1/2 cup scrambled paneer (cottage cheese)
  • 2-3 tbsp maida (all purpose flour)
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • salt to taste
  • 1 tbsp rice flour
  • For Biriyani :2 cup Basmati rice - soaked in water for 30 mins 2 onions- finely chopped
  • 2 tomatoes - finely chopped
  • 2 green chilies - slit at the end
  • 1/2 cup mint leaves
  • 1 tbsp ginger-garlic paste
  • 1/4 cup curd / yogurt
  • 1/2 tsp red chili powder
  • 1 tsp chicken powder or garam masala
  • salt to taste
  • 4 cloves 1/2 cinnamon stick
  • 1 mace 1 tsp nutmeg powder
  • 1 bay leaf
  • 1 star anise
  • 1 tsp black cumin seeds (shahi-jeera)
  • 4 tbsp oil
  • To Garnish :1/4 cup mint leaves
  • 1/4 cup chopped coriander leaves
  • 1/4 cup milk
  • 4 saffron strands or edible orange color
