Ingredients

  • 1 tablespoon dry sherry
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1 1/2 lbs chicken breasts, skinned, boned, and cut in bite-size pieces
  • 4 tablespoons salad oil
  • 4 -6 dried hot chili peppers
  • 1/2 cup salted peanuts
  • 1 teaspoon garlic
  • 1 teaspoon ginger, minced
  • 2 green onions, cut in 1-inch lengths
  • 2 tablespoons soy sauce
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dry sherry
  • 1/4 cup chicken broth or 1/4 cup water
  • 1 teaspoon sesame oil
  • 1 teaspoon chili paste with garlic
