  • 5 lbs bone
  • 3 ½ lbs meat
  • 1/3 cup fine
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • ½ tsp mustard powder
  • ¼ cup olive oil
  • 2 large
  • 1 garlic clove
  • 5 carrots
  • 3 stalks celery
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1 tsp cinnamon
  • ½ tsp allspice
  • L bottle good Merlot or Burgundy wine
