My husband Matt gets credit for this breakfast lasagna idea. I wasn't doing low carb at the time and thought I might use a traditional noodle and layer different breakfast meats, eggs, cheese, etc
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Mix all the ingredients together until a dough forms (you can use a food processor or just mix well manually)
Use as much of the ingredients as you can until the baking dish is full and just barely overflowing – the veggies will cook down by an inch or more in the oven, so don’t worry about overcrowding the pan
Preheat the oven to 425 degrees F. Line a baking sheet or pizza pan with parchment paper. Combine the shredded mozzarella and cubed cream cheese in a large bowl
