Ingredients

  • 3 cups of cooked rice
  • 1 cup diced onion
  • 1 cup corn
  • 1 cup diced green bell pepper
  • 1/2 T each of ground cumin, coriander, and chili powder
  • 1 14.5 oz can black beans, drained and rinsed
  • one
  • 2 limes if you have them)
  • salt to taste ( I used quite a bit because the pre-made rice had no seasoning)
  • 1/3 c diced pickled jalapeno peppers ( I would have used 1/2 to 1 fresh jalapeno if I had one)
  • sprinkle of feta cheese
  • 1 cup diced mango
