Lemon Baked Salmon with Pine Nuts and Mint Yogurt Sauce brings together my favorite Mediterranean flavors to create a flavorful, nutritious dinner that is ready in under 30 minutes. The lemon baked salmon is topped with toasted pine nuts and a minty yogurt sauce. Ingredients
4 4 oz
salmon fillets ¼ cup pine nuts, toasted Fresh parsley for garnish, chopped ½ lemon, thinly sliced Salt and pepper For the salmon marinade: ¼ cup olive oil ½ lemon, juiced 2 garlic cloves, minced For the mint yogurt sauce: ½ cup plain yogurt, low fat 1 garlic clove, minced 1 Tablespoon fresh mint leaves, chopped 1 teaspoon lemon juice Instructions Preaheat the oven to 325 degrees. In a medium mixing bowl combine the marinade mixture: olive oil, lemon juice, minced garlic and a dash of salt and pepper. In an oven safe baking dish lay the salmon filets and brush each side of the fillets with the marinade mixture. Sprinkle salt and pepper on each side of the fillets. Lay one or two lemon slices on each salmon filet. Bake the salmon for 15-20 minutes or until the internal temperature is 145 degrees and pink and flaky with a fork. While the salmon bakes heat a small skillet over medium heat and add the pine nuts. Toast the pine nuts stirring constantly for 3-4 minutes, until you see small golden brown specs on the pine nuts. Set aside. In a small bowl combine the yogurt, mint, garlic clove and lemon juice and set aside. Once the salmon is done baking remove from the oven. Garnish with the yogurt sauce, toasted pine nuts and freshly chopped parsley. 3.2.2925
