  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • zest of 1 to 2 medium lemons (to taste)
  • 1 cup granulated sugar
  • 1/3 cup unsalted butter, melted and cooled
  • 1 teaspoon lemon extract
  • 1/4 cup lemon juice (from about 2 medium lemons)
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup chopped pecans
  • 1 & 1/2 cups confectioners’ sugar
