Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 3 tablespoons fresh squeezed lemon juice
  • 3 tablespoons olive oil plus
  • 4 tablespoons chopped rosemary sprigs
  • 4 tablespoons chopped thyme
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon kosher or sea salt Asparagus
  • 1 pound asparagus, cleaned and woody bottoms removed
  • 1- inch from bottom
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper Salad
  • 4 cups mixed greens
  • 1 cup halved tomatoes
  • 3 tablespoons clean eating vinaigrette of choice, homemade or store bought
