Cook time 16 mins Total time 36 mins Serves: 24 Ingredients ½ cup butter, softened 1 cup granulated sugar 1 teaspoon pure vanilla extract 1 large egg 1&1/2 teaspoons lemon zest 1 Tablespoon fresh lemon juice ¼ teaspoon salt ¼ teaspoon baking powder ¼ teaspoons baking soda 1&1/2 cups all-purpose flour *colored sugar for rolling Instructions Preheat oven to 350 degrees Line a baking sheet with silpat or parchment paper. In a stand mixer, cream together the butter and sugar. Add the vanilla, egg, lemon zest, and lemon juice, beating well. Add the salt, baking powder, soda, and one-third of the flour and beat well. Add the remaining flour and beat until well combined. Form dough into balls (about 1&1/2 Tablespoons each). Roll into colored sugar. Place on prepared baking sheet. Bake for 16 minutes or until lightly golden on bottom and no longer shiny on top. (Bake for 2 minutes less for a softer cookie). Let cool on wire rack. Makes 2 dozen cookies 3.2.1284
