Ingredients

  • 1 tbsp ginger, finely chopped (or 1 tbsp grated frozen ginger)
  • 1 cup brown sugar
  • 2 tbsp lemon juice
  • 3/4 cup dried cranberries
  • 1/4 cup dried prunes (diced)
  • 1 tbsp grated lemon rind
  • 1 1/2 cups all-purpose flour
  • 1/2 cup bran (I used PC Fiber Cereal and buzzed it up in a food processor)
  • 1/2 cup quick-cooking oats
  • 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup unsalted butter, at room temperature
  • 2 eggs, beaten
  • 1 cup buttermilk (or substitute 1 cup milk with 1 tbsp vinegar)
  • 1 tbsp chopped
  • 3/4 cup sugar
  • 3-5 minutes
