  • 4 egg yolks, room temperature (reserve whites for meringue)
  • 1 1/3 cups granulated sugar
  • 1/3 cup cornstarch
  • ¼ teaspoon salt
  • 1 ½ cups water
  • 1 tablespoon lemon zest (1-2 lemons)
  • ½ cup freshly squeezed lemon juice (2-3 lemons)
  • 2 tablespoons unsalted butter
  • 4 egg whites, room temperature
  • 1/4 teaspoon cream of tartar
  • 1/4 cup sugar
