  • 1 cup (7 oz) granulated sugar
  • ¼ cup cornstarch
  • ⅛ teaspoon salt
  • 1½ cups water
  • 6 large egg yolks
  • 1 tablespoon finely grated lemon zest plus ½ cup fresh lemon juice (2 1/2 to 3 lemons)
  • 2 tablespoons butter, cut into 2 pieces
  • ⅓ cup water
  • 1 tablespoon cornstarch
  • 4 large egg whites, at room temperature
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cream of tartar
  • ½ cup (3½ oz) granulated sugar
