Ingredients

  • 1/4 cup buckwheat flour
  • 2 tbsp coconut flour**
  • 1/4 tsp baking powder
  • 1/2 tsp coconut sugar (optional)
  • 1 tsp poppy seeds
  • zest of 1/2 a lemon
  • 1 cup vegan buttermilk (1 cup soy milk + juice from 1/2 a lemon + 1/2 tsp vanilla extract)
  • 1/2 tsp lemon extract (or juice from the other half of the lemon)
