Ingredients

  • 40 g (1/3c) coconut flour
  • 100 g (1c + 1T) unsweetened shredded coconut
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 85 g (6T) unsalted butter at room temp. and softened
  • 100 g (1/2c) granulated sugar
  • 1 large egg white
  • 100 g (1/2) granulated sugar
  • 2 T corn starch
  • 1/8 tsp salt
  • 1/2 c water
  • 1/4 c milk
  • 2 large egg yolks (save the whites for the meringue)
  • 1 T unsalted butter
  • 1/4 c fresh lemon juice
  • 1 tsp lemon zest
  • 2 large egg whites
  • 50 g (1/4c) granulated sugar
