Ingredients

  • Inspired by Lauren's recipe
  • Makes 10
  • 3/4 cup full-fat ricotta cheese (I used homemade)
  • 1/2 cup sugar
  • 2/3 cup 1% milk
  • 1/4 cup canola oil
  • zest of 5 Meyer lemons
  • 1/4 cup Meyer lemon juice
  • 1 large egg
  • 1 1/2 cups spelt flour
  • 1/4 cup quinoa flour (or more spelt)
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • Icing
  • ¼ cup icing sugar
  • ½ - 1 tsp Limoncello
