Ingredients

  • masala
  • 2 tablespoons ghee (clarified butter)
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground turmeric
  • 1 (14 ounce) can tomato sauce
  • 1 cup heavy whipping cream
  • 2 teaspoons paprika
  • 1 tablespoon white sugar
  • 1 tablespoon vegetable oil
  • 4 skinless, boneless chicken breast halves, cut into bite-size pieces
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon salt, or to taste (optional)
  • 1 teaspoon white sugar, or to taste (optional)
  • 1 large eggplant
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, thinly sliced
  • 1 tablespoon ginger garlic paste
  • 1 tablespoon curry powder
  • 1 tomato, diced
  • 1/2 cup plain yogurt
  • 1 fresh jalapeno chile pepper, finely chopped
  • 1 teaspoon salt
  • 1/4 bunch cilantro, finely chopped

  • CURRY SAUCE
  • 1 can good-quality coconut milk (regular or lite)
  • 1 stalk lemongrass , finely sliced and minced OR 2-3 Tbsp. Frozen prepared lemongrass
  • 1-2 fresh red chilies, minced (OR substitute 1/2 to 3/4 tsp Dried crushed chili)
  • 1/4 cup red onion, minced
  • 3-4 cloves garlic, minced OR 1/2 Tbsp. Bottled pureed garlic
  • 1 thumb-size piece galangal or fresh ginger, grated or minced
