Ingredients

  • 30 minutes after I finished eating and all those delicious but, um, questionably healthy ingredients sat in my stomach like a greasy, calorific rock. One consequence of eating reasonably healthily for the last few years (much more so in the last year) is that suddenly those old meals you used to love don’t make you feel so good any more.
  • 3-4 pieces thick-cut bacon (probably not maple, but…whatever floats your boat)
  • 2 leeks (probably 1 1/2 C diced)
  • 4-5 stalks celery, diced
  • 6-7 medium potatoes, peeled and diced
  • 4-6 C chicken broth (watch the sodium here–careful adding extra salt or you may end up with a salt lick soup)
  • 3-4 C milk (I used 1%)
  • 1/3 C plain yogurt
  • Parmesan rind (optional, but delicious if you have one hangin’ around)
  • salt and pepper to taste
