  •  3 slices medium-cut bread (a light pale rye bread is excellent for this)
  •  2 oz (50 g) butter
  •  1 clove garlic, crushed
  •   salt and freshly milled black pepper
  •  4 oz (110 g) gravadlax, finely chopped
  •  3 tablespoons soured cream or Greek yoghurt
  •   cayenne pepper
