Ingredients

  • 1/2 pound medium-width rice noodles
  • 2 teaspoons sugar
  • 1 garlic clove, crushed
  • 1/2 teaspoon crushed red pepper
  • 1/4 cup Asian fish sauce
  • 1/4 cup water
  • 3 tablespoons fresh lime juice plus 1 lime, cut into wedges
  • 1/2 tablespoon distilled white vinegar
  • 4 cooked lobsters (1 1/4 pounds each)
  • 1 seedless European cucumber, cut into 2-inch matchsticks (2 cups)
  • 1/2 cup cilantro leaves
  • 1/4 cup basil leaves, shredded
