Ingredients

  • 2 large leeks, white and light green ends only, cleaned, trimmed, and thinly sliced

  • ¼ cup diced Braeburn, Empire, Mc
  • Intosh, or Cortland apple
  • 1 teaspoon minced fresh ginger
  • ½ teaspoon ground cardamom
  • 4 cups chicken stock or Bone Broth vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, peeled, chopped
  • ½ teaspoon cumin
  • ¼ teaspoon cinnamon
  • ¼ teaspoon cloves, ground
  • ¼ teaspoon cardamom
  • ½ teaspoon curry powder
  • 1 ½ teaspoons salt
  • ¾ cup tomato paste
  • 4 cups water or vegetable broth
  • 1 tablespoon lemon juice, fresh
