  • 1 cup peanut butter 1 scoop protein powder 1 cup flax meal ½ teaspoon vanilla extract ⅓ cup sweetener (optional) ½ cup peanuts, for coating (optional) Instructions In a medium bowl, mix together peanut butter, flax meal, protein powder, vanilla and sweetener for about 1-2 minutes or until it begins to thicken. Cover tightly with plastic wrap and refrigerate mixture for at least 1 hour or up to 1 day so that the peanut butter mixture can firm up. Shape peanut butter into 1-inch balls, cover and refrigerate for at least 20 minutes to allow to firm up again.
