  • 2 cups extra-virgin olive oil
  • 4 ounces  ‘ndjua
  • 1 large eggplant, fried (see note) 
  • 2 cups tomato sauce
  • 1 small bunch basil, leaves picked
  • 4 ounces ricotta salata, grated
