NoKnead Overnight Rye Bread. Rye bread bold enough to build your best Reuben with. I know most everyone has been trying out making their own corned beef, which I think is fantastic
I was aware of all the recipes that required nokneading but still the hours of waiting were too long and by the time the bread would be ready, my head would fall from my hands from sleep
It’s also important not to over knead this dough. This means that modern wheat (constantly bred and changed) is not an ancient grain, while einkorn, emmer/farro, Kamut®, and spelt would be considered ancient grains in the wheat family
The dough needs to be very soft and easy to knead but not sticky. Heat a large skillet or frying pan on a medium to high heat, no oil, and at the same time turn your broiler on to heat up
I have no idea if the oats were responsible, but this loaf seemed moister to me than the previous ones (and the grain was finer), but I also used a smaller baking dish
