Ingredients

  • 1 (8 ounce) box Jiffy cornbread mix
  • 2 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can creamed corn (not drained)
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 1/2 cups cheddar cheese
  • 4 cups sweet potato, cubed ( bake them 1 hour or until softened to get full flavor)
  • 1/4 to 1/2 cup Brown sugar (I tasted my potatoes and reduced sugar since they were so sweet)
  • 2 eggs, beaten
  • 1-2 tsp cinnamon
  • 1/2 teaspoon salt
  • 4 tablespoons butter, softened
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 3 tablespoons butter, softened
  • 1/2 cup chopped pecans and or mini marshmallows
  • 2 pounds parsnips, peeled
  • 1 pound carrots, unpeeled
  • 3 tablespoons good olive oil
  • 1 tablespoon kosher salt
  • 1 1/2 teaspoons freshly ground black pepper
  • 2 tablespoons minced fresh dill or parsley ( I used herbs de provence)
