  • 1 cup chopped lettuce
  • 1 cup sour cream

  • Shredded Beef
  • 1 1/2 pounds chuck roast, cut into 2 inch pieces
  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon unsalted butter
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon seasoned salt
  • 1 1/2 cups low sodium beef stock
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 3 cloves garlic, finely chopped
  • Cornbread Pockets
  • 1 1/2 cups self-rising cornmeal mix, I used House-Autry
  • 1/4 cup all purpose flour
  • 1 egg, beaten
  • 1 cup buttermilk
  • 4 tablespoons vegetable oil, divided
