Ingredients

  • 190 g of caster sugar (1 cup)
  • 1 large free range egg
  • 1 TBS smooth apricot jam
  • 140 g of plain flour (1 cup)
  • 1 tsp bicarbonate of soda (baking soda)
  • pinch of salt
  • 1 TBS butter, melted
  • 1 tsp vinegar (I used cider)
  • 225 ml of milk (1 cup)

  • For the sauce
  • 225 ml cream (1 cup)
  • 6 ounces butter (3/4 cup)
  • 190 g of caster sugar (1 cup)
  • 115 ml of hot water (1/2 cup)
