Ingredients

  • 125 grams all-purpose flour (around 3/4s cup + 1 tablespoon)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 125 grams granulated white sugar (around 1/2 cup + 3 tablespoons)
  • 1/2 teaspoon baking soda
  • 125 grams butter, softened at room temperature
  • 2 large eggs
  • 1 1/2 tablespoons buttermilk
  • 1/2 teaspoon vanilla extract
  • 1//2 cup fresh mango bits (or cubes if you want bigger mangoes in the cupcake)*
  • 3 medium-sized fresh mangoes
  • 1/4 cup simple syrup
