  • 1/8 tsp yeast
  • 35 ml water
  • a small pinch of salt
  • 100 g overnight sponge
  • 300 g flour (with 7-8 % protein)
  • 1/2 tsp yeast
  • 170 ml milk
  • (doesn't have to be scalded)
  • 30 g sugar
  • 1/8 tsp salt
  • Makes 6-8 slightly smaller mantou

  • 1 tbsp wheat germ

  • 35 ml soya milk*
  • 2 tbsp sugar
  • 1 tbsp oil
  • a pinch of salt
