Ingredients

  • Crust
  • Just less than 1⅝ cups all-purpose flour
  • Pinch of salt
  • 8 tablespoons butter, cut into small pieces
  • 1 tablespoon vegetable shortening (or lard)
  • Generous ¼ golden superfine sugar (I used regular granulated sugar)
  • 4 tablespoons cold milk
  • ¾ cup pecan halves
  • ¼ cup finely chopped pecans
  • ½ cup maple syrup
  • ½ cup dark corn syrup
  • 3 tablespoons brown sugar
  • 2 tablespoons butter, melted
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 2 large eggs, lightly beaten
  • 2 large egg whites, lightly beaten
