  • 1 small butternut squash (about 8-inches long-ish)
  • Cooking oil, for brushing
  • 1/4 cup maple syrup
  • 2 Tbsp. butter
  • 1/2 tsp. dried thyme leaves
  • Fresh thyme sprigs
  • 2-3 Tbsp. finely chopped pecans
  • Salt and freshly ground pepper
  • 1 Tbsp. maple syrup
  • Finishing salt, like Maldon's
