  • 1 fresh Anaheim chile, cut into 1/4-inch rounds
  • 1 cup dry white wine
  • 1 Tbsp. unsalted butter
  • 1/2 pound bay or small gulf shrimp, peeled and deveined
  • 5 ounces spaghettini
  • 1/2 bunch arugula, washed, spun dry, and chopped into ribbons (1 cup)
