of mashed potatoes (I like to use just basic mashed potatoes with butter, salt & splash of milk or broth)
shredded cheese (any type you want. I used shredded Mexican blend cheese today). I also like using a chipotle cheddar cheese or a smoky gouda cheese. Use whatever kind of cheese you have on hand.
parmesan cheese or cream cheese, optional (I like to add one of these but you don't need to do it)

The creamiest, cheesiest mashedpotatoes EVER. You can prepare this dish the day before, just cook the potatoes and mash them, then add them to the casserole dish, cover and bake the next day and add all the toppings
Using potatoes, puff pastry, butter (well, really margarine so I could serve these with grilled sausages), olive oil and garlic, I’ve created a cross between a tart and a knish and I, for one, am very happy with the results
