  • 2 large plates or bowls
  • 2 bunches kale (rinsed and torn)
  • 1/2 cup pitted and sliced Kalamata olives
  • 1/2 cup chopped marinated artichoke hearts
  • 1 large or 2-3 small tomatoes (sliced)
  • 1 avocado (diced)
  • 6 oz cooked chicken (chopped)
  • 1/4 cup feta cheese
  • 1 lemon
  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1 clove garlic (minced)
  • 1/2 tsp Italian seasoning
  • pinch of salt and pepper to taste
