  • 3 egg yolks
  • 20 g granulated sugar
  • 3 egg whites
  • 100 g granulated sugar
  • 1 cup (100g) cake flour
  • 9 g matcha powder
  • 50 g milk
  • 30 g butter, melted
  • Method:Preheat your oven to 170 degrees Celsius or 340 degrees Fahrenheit.
  • Grease a small rectangular tray (about 35x25cm) lined with parchment paper.
  • Whisk together egg yolks and 20g sugar until light and fluffy.
  • Whisk egg whites until soft peaks form.
  • Add sugar one tablespoon at a time, whisking until stiff peaks form and the meringue is glossy.
  • Fold meringue into whisked egg yolks in 3 additions.
  • Sift the cake flour and matcha powder over.
  • Fold in gently.
  • Fold in the milk and melted butter in 3 additions.
  • Spread the batter evenly on the prepared tray.
  • Bake for 12-14 minutes, until a skewer comes out clean when poked in the centre.
  • Cool completely.
