Especially not when autumn salads can be as tasty as this warmroasted cauliflower andbutternutsquashsaladwith streaky bacon and caramelised pecans served with a sweet but sharp honey and balsamic dressing
Or maybe you love saladsand could eat a salad for breakfast, lunch and dinner. Since we’re in the crucial weeks of the “New Year, New You” phase, I’m sure you’re all getting pretty tired of salads
Taste for seasoning, and serve once the soup is warm. This is a perfect autumn meal with a nice salad on the side or would make a great starter for a formal meal, such as with Thanksgiving dinner
The salad can be served now, with the ingredients still warm, or at room temperature. Additionally, I served this at room temperature instead of slightly warm as called for in the original recipe
My SIL gives us a homegrown butternutsquash every year and while it can sit in a cool place for a few months, I prefer to at least roast the flesh, feed the squirrels with the peels and seeds and freeze what I do not immediately consume

The long hot summer, (not…live in Seattle but humor me), leaves me craving warm, bubbly casserole dishes made with Barilla Penne Pasta and served with Clos du Bois Chardonnay
Place all ingredients in a shallow roasting pan coated with cooking spray. Butternutsquash is the easiest and prettiest of the squashes to use because of its long smooth neck
Add the roasted garlic mayo and mix until all is combined, evenly coated and sauce is warmed. Add the sliced mushrooms to the pan when chicken is cooked
That said, there are also sections on ‘saladsand vegetables’, ‘roasts and grills’, ‘mezze and sharing plates’, ‘breads and grains’ and finally ‘desserts and sweet treats’ so something for everyone no matter what hemisphere you are living in
Serve warm. RoastedButternutSquashwith Pear and Red Walnuts via @Lori_Rice. When you use these deeply flavored spices you get a beautiful balance of slightly sweet squash, with earthy pear, a bit of heat and crunchy walnuts
Throw those on top with some Spicy and Sweet Roasted Pepitas. Instead, this soup has a smooth texture with some bits of squash, apple and onion + crispy sage and crunchy flavorful pepitas on top
